Ingredients:
2 tbsp extra-virgin olive oil
1 onion diced
2 garlic cloves, minced
1 carrot diced
1 stalk celery, diced
1 tsp ground cumin or 1tsp of chili powder
1 red bell pepper
¼ tsp ground black pepper
2 quarts chicken stock
4 cups spinach
1 ½ cups small pasta uncooked noodles
2 cups shredded chicken
2 tsp grated lemon rind
1/3 cup lemon juice
